Hey there, happy to see you. I like the word fresh. I think of a crisp fall day or a new spring day. Everything is new in spring, it is a hopeful time as the leaves on the trees reappear and the first flowers are popping out of the ground. Migrating birds fly back from the south if you live in the north as I do.
To me, the word fresh encompasses many things, fresh food, fresh skin, fresh air, fresh ideas.
We hear more and more about the health benefits of a plant-based diet. There are several books and DVDs on the subject. Personally, I have been working on getting more plant food in my diet. There are so many eating plans, it can be a bit confusing. They all have research saying how healthy they are. There is a link in here to a simple food diary you can print and use. (Link is not working, under construction, sorry) There are spaces for six days on each half page. My feeling is it is nice to have a day off a week.
I love making salad in jars. They stay good in the fridge for a week, to up to two weeks. Some recipes say to put salad dressing on the bottom, I don’t, it makes them last longer. The fridge, glass canning jar, and the lids seem to create a vacuum that keeps these fresh. I use a food processor to make this quick and easy. A friend from work told me about this idea and I am so happy. It really makes salads easy. They can take so long to make, this way for lunch or dinner you can have several or ten ready to go.
