We hear more and more about the health benefits of a plant-based diet. There are several books and DVDs on the subject. Personally, I have been working on getting more plant food in my diet. There are so many eating plans, it can be a bit confusing. They all have research saying how healthy they are.
I love making salad in jars. They stay good in the fridge for a week, to up to two weeks. Some recipes say to put salad dressing on the bottom, I don’t, it makes them last longer. The fridge, glass canning jar, and the lids seem to create a vacuum that keeps these fresh. I use a food processor to make this quick and easy. A friend from work told me about this idea and I am so happy. It really makes salads easy. They can take so long to make, this way for lunch or dinner you can have several or ten ready to go.
